  • 3 pounds Beef Chuck Roast cut into 1-inch cubes
  • 2 tablespoons Olive Oil can be swapped with vegetable oil
For the Vegetables
  • 1 medium Onion yellow or white
  • 4 cloves Garlic minced
  • 2 pounds Yukon Gold & Russet Potatoes cut into chunks
  • 2 medium Carrots chopped
  • 2 stalks Celery chopped
  • 1 cup Frozen Peas or fresh peas if available
For the Seasoning
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Smoked Paprika or regular paprika
  • ½ teaspoon Red Pepper Flakes optional
  • 1 teaspoon Salt adjust to taste
  • ½ teaspoon Black Pepper adjust to taste
For the Sauce
  • 4 cups Beef Broth low-sodium or homemade
  • ¼ cup All-Purpose Flour
  • ¼ cup Cold Water
For Garnish
  • 2 tablespoons Fresh Parsley chopped

Method
 

Step-by-Step Instructions
  1. Pat the beef cubes dry with a paper towel and season with salt and black pepper.
  2. In a skillet over medium-high heat, add olive oil and brown the seasoned beef cubes for 4-5 minutes. Set aside.
  3. In the crockpot, layer chopped onion and minced garlic, sprinkling in herbs and spices.
  4. Pour beef broth over the herb mixture and add seared beef cubes, ensuring they are submerged.
  5. Stir in chopped potatoes, carrots, and celery, then toss gently to mix.
  6. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  7. Mix flour and cold water into a slurry, then add to the crockpot to thicken the sauce.
  8. Increase heat to high and cook for an additional 15-20 minutes until sauce thickens.
  9. In the last 5 minutes, stir in frozen peas.
  10. Adjust seasoning before serving and let cool slightly for easier serving.
  11. Dish out and garnish with fresh parsley before serving.
