Step‑by‑Step Instructions
  1. Prepare Chicken: Remove the meat from the rotisserie chicken and shred into bite-sized pieces. Set aside.
  2. Sauté Aromatics: Heat olive oil in a large pot. Add onion, carrots, and celery; sauté for 5-7 minutes.
  3. Combine Liquids: Pour in chicken broth and water. Add chicken carcass, thyme, rosemary, bay leaf, and peppercorns.
  4. Simmer Broth: Reduce heat and let it simmer for 1 to 2 hours. Skim off any foam occasionally.
  5. Strain Broth: Remove carcass and strain the broth through a fine-mesh sieve.
  6. Finish Soup: Bring the broth back to a simmer, add egg noodles, and cook for 8-10 minutes.
