  • 1 pound Gnocchi Swap with cauliflower gnocchi for lower carbs.

Method
 

Step-by-Step Instructions
  1. Place the boneless, skinless chicken breasts in a slow cooker and sprinkle the ranch and Italian dressing seasoning mixes evenly over the top.
  2. Pour the chicken broth over the seasoned chicken, then add the cream cheese on top in cubes.
  3. Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
  4. Once the chicken is fully cooked, remove it from the slow cooker and shred it using two forks.
  5. In a separate pot, bring salted water to a boil and add the gnocchi to cook for 2-3 minutes.
  6. Drain the gnocchi and gently fold them into the mixture in the slow cooker, adding heavy cream.
  7. Stir in the shredded cheddar and grated Parmesan cheese until melted and smooth.
  8. Fold in the crumbled bacon and chopped green onions for added flavor and crunch.
  9. Taste the dish and season with salt, pepper, and optional red pepper flakes.
