- In a large mixing bowl, add the shredded carrots, thin apple slices, raisins or dried cranberries, and nuts if you're using them. Stir gently to blend the textures and colors.
- In a separate bowl, whisk together fresh lemon juice, honey or maple syrup, and Greek yogurt or mayonnaise until smooth and creamy.
- Pour the creamy dressing over the salad ingredients. Toss gently until everything is evenly coated.
- Cover the bowl with plastic wrap and refrigerate the salad for at least 15 minutes to allow flavors to meld.
