- Gently clean mushrooms with a damp cloth. Set aside on a paper towel to absorb moisture.
- Whisk together flour, baking powder, garlic powder, smoked paprika, salt, and black pepper in a medium bowl. Gradually pour in sparkling water and whisk until smooth.
- Heat oil in a deep pan to 180°C (350°F). Monitor temperature with a thermometer.
- Dip mushrooms into the batter, ensuring they're fully coated. Fry in batches for 3-4 minutes until golden brown.
- Use a slotted spoon to remove the crispy mushrooms and place them on paper towels to drain excess oil. Sprinkle lightly with salt.
- Combine mayonnaise, sour cream, chives, parsley, dill, minced garlic, lemon juice, and season with salt and pepper in a small bowl to make ranch sauce.
- Serve the crispy mushrooms warm with ranch sauce on the side for dipping.
