  1. In a large skillet over medium heat, add the ground beef and cook for 5-7 minutes, breaking it apart as it browns. Drain excess fat and set aside.
  2. Return the skillet to medium heat and add chopped onion to the beef, cooking for about 4-5 minutes until translucent. Stir in minced garlic for an additional 1-2 minutes.
  3. Mix in taco seasoning and ¼ cup of water, stirring to combine. Let it simmer for 3-4 minutes.
  4. Stir in black beans, optional kidney beans, and corn, cooking for another 3-4 minutes.
  5. Preheat your oven to 350°F (175°C). On a large baking sheet, evenly spread out a layer of tortilla chips.
  6. Distribute the beef and bean mixture over the tortilla chips. Then sprinkle shredded cheddar and Monterey Jack cheese on top.
  7. Place the baking sheet in the oven and bake for 5-10 minutes until the cheese melts and bubbles.
  8. Remove from the oven and dollop sour cream and guacamole on top. Add salsa and any additional toppings.
  9. Serve immediately while hot and cheesy.
