- In a medium saucepan, combine 1 cup of water, ¼ cup of unsalted butter, and a pinch of salt. Bring the mixture to a rolling boil over medium heat.
- Remove the saucepan from the heat and quickly stir in 1 cup of all-purpose flour. Mix until a smooth dough forms, pulling away from the sides of the pan, about 2-3 minutes.
- Allow the dough to cool for about 5-10 minutes to prevent cooking the eggs. Once cooled, add two large eggs—one at a time—mixing vigorously after each addition until fully incorporated.
- Include 1 teaspoon of vanilla extract, blending until the dough is smooth and glossy, ready to be piped into churro bites.
- Prepare a piping bag fitted with a star tip and fill it with the dough mixture. On a sheet of parchment paper, pipe small bites of dough, about 1 inch long, spacing them apart.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes. While it heats up, lightly spray the air fryer basket with vegetable oil.
