Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, heat oil and sauté chopped onions and minced garlic for 3-5 minutes.
  3. Add rice to the pot and toast for 2-3 minutes.
  4. Add chicken broth, chicken chunks, and mushrooms, simmer for 5 minutes.
  5. In a separate saucepan, melt cheddar and mozzarella cheese with heavy cream over low heat for 5 minutes.
  6. Pour cheese sauce into the pot and mix thoroughly.
  7. Transfer to a greased baking dish, cover with foil, and bake for 30-35 minutes.
  8. Remove foil and bake for an additional 10-15 minutes until golden.
  9. Allow to rest for 10 minutes before serving.
