Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions, about 8-10 minutes until al dente.
  2. Preheat your oven to 400°F (200°C). Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Mash roasted garlic into a paste, then add heavy cream and simmer for 3-4 minutes.
  4. Whisk in grated Parmesan cheese until melted and sauce is thickened, adding reserved pasta water as needed.
  5. Combine drained pasta with the sauce, folding in any optional add-ins. Toss to coat and heat for another 2 minutes.
