  • 2 tablespoons Shallots (minced) yellow or green onions as alternatives

  • 2 tablespoons Dill (minced) fresh recommended
  • 2 tablespoons Green Onion (minced) optional
  • 8 ounces Vermicelli Noodles or rice noodles/quinoa
  • 4 cups Lettuce any leafy green
  • 0.5 cup Mint or substitute with basil
  • 0.5 cup Peanuts (toasted and chopped) or seeds for nut-free
  • 0.5 cup Vietnamese Dipping Sauce (Nuoc Cham) for serving
  • Fried Shallots optional for topping

Step-by-Step Instructions
  1. In a medium bowl, combine the tilapia with turmeric, minced garlic, minced ginger, salt, white pepper, sugar, and fish sauce. Mix well and let marinate for 15 minutes.
  2. While the fish marinates, prepare the shallots, dill, green onions, and cook the vermicelli noodles according to package instructions.
  3. Heat oil in a large skillet over medium heat. Sauté the minced shallots until translucent, then add the marinated tilapia and cook for 2 minutes on each side.
  4. Once the fish is cooked, stir in the dill and green onions, cooking for an additional 30 seconds.
  5. To serve, layer cooked vermicelli noodles in bowls, add lettuce, sautéed fish, and top with fried shallots, mint, and peanuts. Drizzle with dipping sauce.
