Ingredients
  

For the Salad
  • 8 ounces Pasta Use your favorite type or gluten-free
  • 2 cups Broccoli Fresh or frozen; fresh is preferred
  • 1 medium Red Onion Chopped
  • ½ cup Sun-Dried Tomatoes Chopped
  • ½ cup Kalamata Olives Pitted and sliced
  • ½ cup Feta Cheese Crumbled
  • ¼ cup Toasted Pine Nuts Optional
For the Dressing
  • ½ cup Mayonnaise Can substitute with Greek yogurt
  • ¼ cup Olive Oil
  • 2 tablespoons Red Wine Vinegar Can substitute with white wine or apple cider vinegar
  • 1 tablespoon Dijon Mustard
  • 2 cloves Garlic Minced
  • 1 teaspoon Dried Oregano Can substitute with Italian seasoning
  • ½ teaspoon Salt Adjust to taste
  • ¼ teaspoon Black Pepper Adjust to taste
  • ¼ teaspoon Red Pepper Flakes Optional for a kick

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Cook pasta until al dente, about 8-10 minutes.
  2. Three minutes before the pasta is done, add broccoli florets to the boiling water.
  3. Drain pasta and broccoli, then rinse under cold running water to cool.
  4. Spread the drained pasta and broccoli on a clean towel to dry.
  5. In a bowl, whisk together mayonnaise, olive oil, vinegar, mustard, garlic, oregano, salt, pepper, and optional red pepper flakes.
  6. In a mixing bowl, combine pasta, broccoli, onion, tomatoes, olives, and feta. Toss to distribute.
  7. Pour dressing over salad and toss gently to coat all ingredients.
  8. Sprinkle pine nuts over the salad and gently mix.
  9. Cover and refrigerate for at least 30 minutes to chill before serving.
