Step-by-Step Instructions
  1. In a large skillet over medium-high heat, add the ground beef. Brown evenly for about 5-7 minutes, ensuring it’s fully cooked.
  2. Carefully drain excess grease into a heatproof container.
  3. Add chopped onion, green bell pepper, and red bell pepper to the skillet. Stir frequently for 5-7 minutes until softened.
  4. Stir in minced garlic and cook for an additional minute, stirring constantly.
  5. Mix in drained black beans and corn, cooking for 2-3 minutes.
  6. Pour in undrained diced tomatoes, stirring to combine all ingredients thoroughly.
  7. Stir all ingredients until well mixed. Continue cooking for another 1-2 minutes.
  8. Sprinkle taco seasoning over the mixture, stirring well.
  9. Pour in beef broth, bringing the mixture to a gentle simmer.
  10. Reduce heat to low, cover, and let simmer for 15-20 minutes. Stir occasionally.
  11. Remove from heat and sprinkle shredded cheese on top. Cover for 2-3 minutes to melt.
