  • 2 pounds flank steak or sirloin can substitute with pork tenderloin

  • 3 large bell peppers mixed colors (red, yellow, orange)
  • 1 large yellow onion can substitute with white onion
  • 4-5 cloves garlic, minced or use 1 teaspoon garlic powder
For the Spices
  • 2 tablespoons chili powder adjust for spice preference
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper, freshly ground
  • 0.25 teaspoon cayenne pepper optional
For Cooking
  • 0.5 cup broth chicken or vegetable
For Serving
  • 1 lime, juiced
  • 12-16 small tortillas flour or corn
Optional Toppings
  • sour cream or Greek yogurt
  • shredded cheese (Monterey Jack or cheddar)
  • salsa or pico de gallo
  • guacamole or avocado
  • fresh cilantro

Method
 

Step-by-Step Instructions for Crockpot Beef Fajitas
  1. Trim excess fat from 2 pounds of flank steak or sirloin and slice the meat against the grain into thin strips. Pat the beef dry.
  2. Slice 3 large bell peppers, cut 1 large yellow onion, and mince 4-5 cloves of garlic.
  3. Combine 2 tablespoons of chili powder, 1 tablespoon each of ground cumin and smoked paprika, and 1 teaspoon each of onion powder, garlic powder, dried oregano, sea salt, and black pepper.
  4. Layer sliced onions and minced garlic at the bottom of the slow cooker, followed by the beef strips and bell pepper slices.
  5. Sprinkle the seasoning blend over the ingredients and pour ½ cup of broth over the top.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until beef is tender.
  7. Squeeze the juice of 1 lime over the cooked mixture and stir.
  8. Warm 12-16 small tortillas in a skillet or microwave.
  9. Serve with warm tortillas and let guests add their favorite toppings.
