Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the tops off the bell peppers, removing the seeds and membranes. Drizzle olive oil on the cut edges and place them in a baking dish.
  3. In a skillet, sauté the diced onion and minced garlic in olive oil for about 3-4 minutes until translucent.
  4. Add ground meat to the skillet and cook for 5-7 minutes until fully browned.
  5. Stir in cooked quinoa or rice, diced tomatoes, and spices. Cook for another 2-3 minutes.
  6. Stuff the prepared peppers with the filling and sprinkle shredded cheese on top.
  7. Cover with aluminum foil and bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes.
  8. Let cool for 5 minutes, then garnish with fresh herbs before serving.
