- In a medium saucepan over medium heat, combine the 28 oz of whole tomatoes, minced garlic, and 1 tablespoon of olive oil. Add 1 teaspoon of white wine vinegar, 1 teaspoon of dried oregano, salt, and black pepper. Let this simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and flavors meld beautifully.
- Preheat your oven to 375°F (190°C). While the oven heats, take 3 ten-inch flour tortillas and cut them into mini circles using a cookie cutter or a large glass as a guide. Lightly brush both sides of each tortilla with the remaining olive oil.
- Place the tortilla circles on a baking sheet lined with parchment paper. Spread 1 to 2 tablespoons of the tomato sauce evenly on each tortilla circle. Then, sprinkle shredded mozzarella cheese over the sauce.
- Slice the black olives into spider bodies and legs or cut the cheddar cheese into ghost shapes using cookie cutters. Arrange these toppings on the sparkling cheese.
- Bake the decorated mini pizzas in the preheated oven for 8-12 minutes, looking for a bubbly, golden cheese topping and a perfectly crisp tortilla base.
- Remove the mini Halloween pizzas from the oven and allow them to cool slightly for about 5 minutes. Serve them warm on a festive platter.
