Step-by-step Instructions
  1. In a medium saucepan over medium heat, combine the 28 oz of whole tomatoes, minced garlic, and 1 tablespoon of olive oil. Add 1 teaspoon of white wine vinegar, 1 teaspoon of dried oregano, salt, and black pepper. Let this simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and flavors meld beautifully.
  2. Preheat your oven to 375°F (190°C). While the oven heats, take 3 ten-inch flour tortillas and cut them into mini circles using a cookie cutter or a large glass as a guide. Lightly brush both sides of each tortilla with the remaining olive oil.
  3. Place the tortilla circles on a baking sheet lined with parchment paper. Spread 1 to 2 tablespoons of the tomato sauce evenly on each tortilla circle. Then, sprinkle shredded mozzarella cheese over the sauce.
