For the Seasoning
  • 1 teaspoon Garlic Powder Fresh garlic can be used
  • 1 teaspoon Paprika Smoked paprika for extra flavor
  • 1 teaspoon Dried Rosemary Thyme is a good substitute
  • 1 teaspoon Dried Thyme Italian seasoning can be used
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly ground preferred

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Rinse and pat dry your potatoes before dicing them into uniform pieces. Toss with 1 tablespoon of olive oil in a mixing bowl.
  3. Combine garlic powder, paprika, dried rosemary, dried thyme, salt, and black pepper in a small bowl to create the seasoning blend.
  4. Dry the beef chops with a paper towel, brush with remaining olive oil, and sprinkle half of the seasoning blend over the chops.
  5. Spread the seasoned potatoes on the sheet pan, nestle the beef chops among them, allowing room for air circulation.
  6. Roast for 20 minutes, then flip the beef and stir the potatoes, basting with melted butter.
  7. Return to oven for an additional 15 to 25 minutes until beef is cooked to your preference. Use a meat thermometer for accuracy.
  8. Remove from oven, cover with foil, and let rest for 5-10 minutes before serving.
