- Combine garlic powder, paprika, dried rosemary, dried thyme, salt, and black pepper in a small bowl to create the seasoning blend.
- Dry the beef chops with a paper towel, brush with remaining olive oil, and sprinkle half of the seasoning blend over the chops.
- Spread the seasoned potatoes on the sheet pan, nestle the beef chops among them, allowing room for air circulation.
- Roast for 20 minutes, then flip the beef and stir the potatoes, basting with melted butter.
- Return to oven for an additional 15 to 25 minutes until beef is cooked to your preference. Use a meat thermometer for accuracy.
- Remove from oven, cover with foil, and let rest for 5-10 minutes before serving.
