- Preheat your oven to 400°F (200°C). Gather all your ingredients.
- Wash and chop the small potatoes, bell peppers, red onion, zucchini, and broccoli into bite-sized pieces. Slice the beef sausage into thick rounds or quarters.
- In a large mixing bowl, combine olive oil, garlic powder, onion powder, dried Italian herbs, smoked paprika, black pepper, and salt. Stir well to create a seasoning blend.
- Add the prepared sausage and veggies to the bowl with the seasoning mixture. Toss until everything is evenly coated.
- Line a large baking sheet with parchment paper. Spread the seasoned sausage and veggies evenly across the sheet.
