  • 2 tablespoons Olive Oil Use a spray bottle for a light coat

For the Optional Dip
  • 1 cup Frozen Chopped Spinach Well-dried after thawing
  • ½ cup Sour Cream Full-fat recommended
  • ½ cup Mayonnaise Full-fat recommended
  • 4 ounces Cream Cheese Softened for easy mixing
  • 2 tablespoons Chives Chopped
  • 1 clove Garlic Minced
  • 1 tablespoon Lemon Juice For brightness

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
  2. Wash russet potatoes and slice them into 1/16 to ⅛ inch thick rounds.
  3. Soak the potato slices in ice water for 30 minutes to 2 hours.
  4. Drain the potato slices and pat them dry with kitchen towels.
  5. In a bowl, drizzle the slices with olive oil and season with salt, pepper, paprika, garlic powder, onion powder, and optional cayenne.
  6. Cut spooky shapes using Halloween-themed cookie cutters and arrange on the baking sheets.
  7. Bake the chips for 15-20 minutes, then flip and bake for an additional 10-15 minutes.
  8. Remove chips and let them cool on a cooling rack.
  9. Prepare the optional spinach dip by mixing spinach, sour cream, mayonnaise, cream cheese, chives, garlic, and lemon juice.
  10. Serve the chips with the dip on a festive platter.
