Step‑by‑Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium-high heat.
  2. Sauté one chopped yellow onion for about 5-7 minutes until translucent.
  3. Add 4 minced garlic cloves, one chopped green, and one red bell pepper; cook for 3-5 minutes.
  4. Add 1 pound of ground beef, break apart, and cook for 7-10 minutes until browned, draining excess grease.
  5. Season with salt, pepper, 2 tablespoons chili powder, 1 tablespoon ground cumin, 1 teaspoon smoked paprika, 1 teaspoon dried oregano, and cayenne pepper.
  6. Stir in one 28-ounce can crushed tomatoes, one 15-ounce can tomato sauce, and one 15-ounce can diced tomatoes.
  7. Mix in one 15-ounce can each of kidney and black beans, and 1 cup beef broth.
  8. Bring to a gentle simmer, reduce heat to low, cover, and cook for 1-3 hours.
  9. After simmering, stir in 2 tablespoons apple cider vinegar and adjust salt and pepper.
  10. Serve topped with optional garnishes.
