- Preheat your oven to 400°F (200°C).
- Core and halve the ripe tomatoes, quarter the onion and peel the garlic.
- Spread the tomatoes, onion, and garlic on a baking sheet.
- Drizzle with olive oil and season with oregano, thyme, pepper flakes, salt, and pepper.
- Roast in the oven for 45-60 minutes until slightly caramelized.
- Allow the roasted vegetables to cool for 10-15 minutes.
- Transfer the cooled vegetables to a blender with vegetable broth and blend until smooth.
- Pour the blended soup into a pot over medium heat and bring to a simmer.
- If desired, stir in heavy cream and simmer for another 15-20 minutes.
- Adjust seasoning, garnish with fresh basil leaves and a drizzle of olive oil before serving.
