Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Core and halve the ripe tomatoes, quarter the onion and peel the garlic.
  3. Spread the tomatoes, onion, and garlic on a baking sheet.
  4. Drizzle with olive oil and season with oregano, thyme, pepper flakes, salt, and pepper.
  5. Roast in the oven for 45-60 minutes until slightly caramelized.
  6. Allow the roasted vegetables to cool for 10-15 minutes.
  7. Transfer the cooled vegetables to a blender with vegetable broth and blend until smooth.
  8. Pour the blended soup into a pot over medium heat and bring to a simmer.
  9. If desired, stir in heavy cream and simmer for another 15-20 minutes.
  10. Adjust seasoning, garnish with fresh basil leaves and a drizzle of olive oil before serving.
