- Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat and sear chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant.
- Pour in heavy cream and mix well with the garlic. Stir in sun-dried tomatoes and let soften for 2-3 minutes.
- Add fresh spinach and stir until wilted. Sprinkle in Parmesan cheese and mix until melted.
- Return chicken to skillet, allow to simmer in the sauce for 2 minutes, then serve over pasta, rice, or veggies.
