Method
 

Preparation Steps
  1. Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat and sear chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant.
  3. Pour in heavy cream and mix well with the garlic. Stir in sun-dried tomatoes and let soften for 2-3 minutes.
  4. Add fresh spinach and stir until wilted. Sprinkle in Parmesan cheese and mix until melted.
  5. Return chicken to skillet, allow to simmer in the sauce for 2 minutes, then serve over pasta, rice, or veggies.
