  • 3 large eggs
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1 scoop pumpkin pie protein powder can substitute with unflavored or vanilla protein powder
  • ½ cup buttermilk can mimic with milk and lemon juice

Directions

  2. Whisk together the flour, pumpkin pie spice, baking soda, salt, and protein powder in a bowl.
  3. Beat the eggs, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Stir in the vegetable oil, pumpkin puree, vanilla extract, and buttermilk until just smooth.
  5. Fold the dry mixture into the wet ingredients until just combined. Add nuts if using.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 35-40 minutes, checking for doneness with a toothpick around the 30-minute mark.
  8. Cool completely in the pan on a wire rack before frosting.
  9. Frost with your choice of frosting, such as cream cheese frosting spiced with cinnamon.
