- Preheat your oven to 400°F (200°C) to prepare for baking the sweet potatoes.
- Wash each sweet potato thoroughly and pierce them with a fork. Drizzle with olive oil and season lightly with salt. Place on a baking sheet and bake for 45-50 minutes, or until fork-tender.
- In a mixing bowl, combine shredded cooked chicken, buffalo sauce, and softened cream cheese. Stir until well incorporated. Add shredded cheddar cheese and mix thoroughly.
- Once sweet potatoes are out of the oven, slice them open lengthwise and fluff the insides. Fill each sweet potato with the buffalo chicken mixture.
- Return the stuffed sweet potatoes to the oven and bake for an additional 5-10 minutes to heat the filling and melt the cheese.
