Method
 

Step-by-Step Instructions
  1. Whisk together eggs, milk or cream, salt, and pepper in a bowl until frothy.
  2. Melt butter in a non-stick skillet over medium-low heat.
  3. Pour egg mixture into the skillet, cooking until mostly set but slightly moist.
  4. Sprinkle cheddar cheese over eggs and cover the skillet to melt.
  5. Preheat oven to 350°F (175°C) if toasting croissants.
  6. Slice croissants in half and toast if desired.
  7. Spread mayonnaise or aioli on the bottom halves of the croissants.
  8. Layer cooked ham on the bottom halves.
