Method
 

Step-by-Step Instructions
  1. Grill fresh corn on medium-high heat for 10-15 minutes until charred.
  2. Allow corn to cool, then cut kernels off the cob.
  3. Melt butter in a skillet, sauté jalapeño and garlic for 1-2 minutes.
  4. Add corn kernels to skillet, stir, and cook for another minute.
  5. Mix in mayonnaise, sour cream, Cotija cheese, and cilantro.
  6. Stir in lime juice, chili powder, smoked paprika, salt, and pepper.
  7. Chill the mixture in a bowl for at least 30 minutes.
  8. Serve with extra Cotija cheese and cilantro, paired with tortilla chips.
