Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or substitute with ground turkey or chicken
  • ¼ cup Grated Parmesan Cheese nutritional yeast can be used for dairy-free
  • 1 large Egg or flax egg for vegan version
  • 1 medium Grated Onion or shallots for a milder taste
  • 2 cloves Minced Garlic or garlic powder in a pinch
  • ¼ cup Chopped Fresh Parsley or dried parsley as alternative
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Dried Italian Seasoning or dried oregano and basil
For the Sauce and Cheese
  • 2 cups Keto-Friendly Marinara Sauce store-bought options like Rao's recommended
  • 1 cup Ricotta Cheese or cashew cream for dairy-free
  • 2 cups Shredded Mozzarella Cheese or provolone/cheddar if preferred
For Cooking
  • 1 tablespoon Olive Oil or avocado oil, can substitute with coconut oil
  • ¼ cup Fresh Basil or substitute with parsley if needed

Method
 

Preparation
  1. In a large mixing bowl, gently combine the ground beef, Parmesan cheese, egg, onion, garlic, parsley, onion powder, garlic powder, dried Italian seasoning along with a pinch of salt and pepper. Mix until just combined.
  2. Shape the mixture into 1 to 1.5-inch meatballs and set aside. Heat a tablespoon of oil in a skillet; brown the meatballs in batches for about 5-7 minutes.
  3. In the same skillet, sauté remaining minced garlic for 30 seconds, then add marinara sauce and warm through, seasoning with salt and pepper.
  4. Preheat the oven to 375°F (190°C). Grease a baking dish and spread half of the marinara sauce at the bottom.
  5. Dot the ricotta cheese over the marinara, place the meatballs on top, then spoon remaining marinara over them.
  6. Sprinkle mozzarella and remaining Parmesan cheese over the casserole.
  7. Bake for 25-35 minutes until melted and golden. Tent with foil if needed.
  8. Allow to rest for 5-10 minutes before serving and garnish with fresh basil.
