  • 1 cup Bell Peppers finely chopped, mix of green and red
  • 1 cup Cheddar Cheese shredded; mozzarella or gouda as substitutes
  • 1 cup Bacon cooked and crumbled; turkey bacon as lighter alternative
  • ½ cup Sour Cream or Greek yogurt
  • ¼ cup Milk non-dairy milk can be used
  • 2 large Eggs lightly beaten; flaxseed meal as vegan substitute
  • 2 tablespoon Worcestershire Sauce soy sauce can be used for gluten-free option
  • 1 tablespoon Dijon Mustard use preferred mustard type

Step-by-Step Instructions
  1. Sauté Vegetables: Heat a tablespoon of vegetable oil in a skillet over medium heat. Add onion, garlic, and bell peppers, sauté for 5-7 minutes until softened.
  2. Mix Meatloaf Ingredients: In a large bowl, combine ground beef, ground pork, breadcrumbs, sautéed vegetables, cheddar cheese, bacon, sour cream, milk, eggs, Worcestershire sauce, mustard, and seasonings until evenly mixed.
  3. Combine Gently: Mix the meatloaf mixture using hands or a spatula until just combined.
  4. Prepare Potatoes: Peel and cube russet potatoes, boil in salted water for 15-20 minutes until fork-tender.
  5. Mash Potatoes: Drain potatoes and return to pot. Add butter, milk, sour cream, cheese, and half the bacon, mash until smooth.
  6. Preheat Oven: Preheat oven to 350°F (175°C).
  7. Shape Meatloaf: Transfer meat mixture to a greased baking dish, shaping into a loaf.
  8. Top with Potatoes: Spread mashed potato mixture evenly over the meatloaf.
  9. Bake: Bake in preheated oven for 60-75 minutes until the top is golden brown and the internal temperature reaches 160°F (71°C).
  10. Rest: Remove from oven and let rest for 10-15 minutes.
  11. Garnish: Slice the meatloaf and garnish with chopped green onions before serving.
