Step-by-Step Instructions
  1. Pat the chicken thighs dry and season generously with salt and pepper on both sides.
  2. Heat olive oil and butter in a large skillet over medium-high heat and brown the chicken for 5-6 minutes per side. Remove and set aside.
  3. Lower heat to medium, add chopped onion, and sauté for 3-4 minutes until translucent.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Add mushrooms and cook for 7-8 minutes until caramelized, stirring occasionally.
  6. Deglaze with white wine, scraping up browned bits, and simmer for 3-4 minutes until reduced.
  7. Stir in heavy cream and thyme, allowing to simmer for about 5 minutes until thickened.
  8. Return chicken to the skillet and simmer for another 5 minutes on low heat.
  9. Remove from heat, stir in remaining butter, and adjust seasoning with salt and pepper.
  10. Serve garnished with parsley alongside mashed potatoes, rice, or noodles.
