Step-by-Step Instructions
- In a large mixing bowl, toss the cubed chicken breasts with olive oil, salt, black pepper, garlic powder, onion powder, and paprika to coat evenly.
- Heat a skillet over medium-high heat, add olive oil and sear the chicken for 3-4 minutes on each side until golden brown and cooked through. Remove and cover with foil.
- In the same skillet, add chopped onion and sauté for 3-4 minutes until softened. Add minced garlic for an additional minute, then add cremini mushrooms and cook until browned, about 5-6 minutes.
- Pour in dry white wine and deglaze the skillet, scraping the bottom to loosen browned bits. Reduce for 2-3 minutes.
- Whisk together chicken broth and flour until smooth, then gradually add to the skillet, stirring constantly. Simmer for 5-7 minutes until thickened.
- Reduce heat and stir in heavy cream and butter until smooth. Adjust seasoning with salt and pepper.
- Return seared chicken to the skillet, heat for 2-3 minutes ensuring chicken is coated and warmed.
- Serve over rice, pasta, or mashed potatoes, and garnish with parsley and optional Parmesan cheese.
