- Preheat your oven to 200°C (400°F). Toss the pumpkin, red bell pepper, and cherry tomatoes with olive oil, salt, and black pepper. Roast for 20-25 minutes until tender.
- In a skillet, heat olive oil and sauté chopped red onion for 5-7 minutes until soft. Add minced garlic and cook for another 1-2 minutes.
- Add roasted vegetables, cooking cream, and nutmeg to the skillet. Simmer on low heat for 5-7 minutes.
