  • 2 tablespoons Olive Oil Vegetable oil can substitute for a neutral option.
For the Pasta
  • 300 grams Dry Pasta (e.g., penne, rigatoni)
  • 1 teaspoon Salt For pasta cooking.
  • 1 teaspoon Black Pepper To taste.
  • ¼ teaspoon Nutmeg To enhance the flavor.
For Garnish
  • 2 tablespoons Fresh Parsley Basil or sage can provide a different flavor profile.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F). Toss the pumpkin, red bell pepper, and cherry tomatoes with olive oil, salt, and black pepper. Roast for 20-25 minutes until tender.
  2. In a skillet, heat olive oil and sauté chopped red onion for 5-7 minutes until soft. Add minced garlic and cook for another 1-2 minutes.
  3. Add roasted vegetables, cooking cream, and nutmeg to the skillet. Simmer on low heat for 5-7 minutes.
  4. Blend the sauce using an immersion blender until smooth. Adjust seasoning if needed.
  5. Cook pasta according to package instructions. Reserve 1-1.5 cups of pasta water before draining.
  6. Combine the pasta with the sauce in the skillet and add reserved pasta water to reach desired consistency. Stir in crumbled feta and garnish with parsley.
