- Step 1: Sear Roast - Heat a skillet over medium-high heat. Pat chuck roast dry, add oil, and sear each side for 5-6 minutes until browned.
- Step 2: Transfer & Season - Transfer roast to slow cooker, season with kosher salt and black pepper evenly.
- Step 3: Prepare Broth - In the same skillet, add water and beef broth, scraping browned bits. Pour over roast in slow cooker.
- Step 4: Add Herbs/Soups - Add bay leaf, dry onion soup mix, thyme, and rosemary to slow cooker. Stir gently.
- Step 5: Slow Cook - Cover and cook on low for 8-10 hours until meat is fork-tender.
- Step 6: Slice Meat - Remove the roast, let it rest for 10 minutes, then slice against the grain.
- Step 7: Prepare Rolls - Preheat broiler, split rolls on a baking sheet, broil for 2-3 minutes, layer cheese and broil until melted.
- Step 8: Assemble Sandwiches - Spread horseradish sauce on rolls, add sliced beef, and serve with au jus for dipping.
