  2. Step 2: Transfer & Season - Transfer roast to slow cooker, season with kosher salt and black pepper evenly.
  3. Step 3: Prepare Broth - In the same skillet, add water and beef broth, scraping browned bits. Pour over roast in slow cooker.
  4. Step 4: Add Herbs/Soups - Add bay leaf, dry onion soup mix, thyme, and rosemary to slow cooker. Stir gently.
  5. Step 5: Slow Cook - Cover and cook on low for 8-10 hours until meat is fork-tender.
  6. Step 6: Slice Meat - Remove the roast, let it rest for 10 minutes, then slice against the grain.
  7. Step 7: Prepare Rolls - Preheat broiler, split rolls on a baking sheet, broil for 2-3 minutes, layer cheese and broil until melted.
