For the Meatloaf
  • 1 lb Ground Beef can substitute with ground turkey or chicken
  • 0.5 lb Ground Pork optional, can use additional ground beef
  • 1 cup Breadcrumbs can use crushed crackers or panko
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 0.5 cup Green Bell Pepper diced
  • 0.5 cup Red Bell Pepper diced
  • 1 cup Cheddar Cheese shredded
  • 4 slices Bacon cooked and chopped
  • 0.5 cup Sour Cream
  • 0.5 cup Milk can use Greek yogurt as substitute
  • 2 Eggs for vegan, switch to flax eggs
  • 2 tablespoon Worcestershire Sauce use low-sodium if desired
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
For the Loaded Potato Topping
  • 2 medium Russet Potatoes can substitute with Yukon gold
  • 4 tablespoon Butter can use olive oil as alternative
  • 0.25 cup Green Onions for garnish

Method
 

Step-by-Step Instructions
  1. Heat a tablespoon of olive oil in a skillet over medium heat. Add chopped onion, minced garlic, and diced green and red bell peppers. Sauté for 5 to 7 minutes until softened.
  2. In a large bowl, combine the ground beef, optional ground pork, sautéed veggies, breadcrumbs, cheddar cheese, bacon, sour cream, milk, eggs, Worcestershire sauce, Dijon mustard, and spices. Mix gently.
  3. Bring a pot of salted water to a boil. Add peeled and diced potatoes and cook for 15 to 20 minutes until fork-tender. Drain and return to pot.
  4. Mash the drained potatoes in the pot. Add butter and a splash of milk, then fold in sour cream, cheese, and bacon. Season with salt and pepper.
  5. Preheat oven to 350°F (175°C) and grease a baking dish.
  6. Transfer meat mixture to the baking dish, shape into a loaf, and spread the potato topping over it.
  7. Bake for 60 to 75 minutes until internal temperature reaches 160°F (71°C) and top is golden brown.
  8. Remove from oven and let rest for 10 to 15 minutes before slicing and garnishing with green onions.
