Method
 

Step-by-Step Instructions
  1. Trim any silver skin and excess fat from the pork tenderloin, pat dry, and rub with salt, black pepper, garlic powder, and onion powder.
  2. Heat a skillet over medium-high heat, add olive oil, and sear the pork on each side for 3-4 minutes until golden brown.
  3. In the same skillet, reduce heat, add butter, then sauté the chopped shallots for 2-3 minutes until translucent.
  4. Pour in the wine to deglaze, scraping up browned bits and let simmer for 2-3 minutes until reduced by half.
  5. Pour in the chicken broth and simmer for 5 minutes, then add heavy cream and mustard, mixing until smooth.
  6. Simmer sauce for another 5-7 minutes until it thickens, stirring occasionally and adjusting seasoning.
  7. Return the seared pork to the skillet, spoon sauce over, then bake in the oven at 375°F (190°C) for 10-15 minutes.
  8. Remove from oven, let the pork rest for 5-10 minutes, slice, and serve drizzled with sauce garnished with parsley.
