Cooking Steps
  1. Thinly slice the ribeye or sirloin steak against the grain and season generously with salt and black pepper. Allow it to rest while preheating the skillet.
  2. Heat a skillet over medium-high heat, add olive oil, and sear the seasoned steak for 1-2 minutes on each side until browned. Remove and let rest.
  3. In the same skillet, reduce heat to medium, add butter, and crack in the eggs. Season with salt and pepper, and add cheddar cheese in the last minute to melt.
  4. Split the bagels in half and toast until golden brown, about 3-5 minutes.
  5. Assemble the bagels by layering the steak and cheesy eggs on the toasted bottom halves. Add optional toppings if desired.
  6. Place the bagel tops over the filling and serve immediately while warm.
