Cooking Steps
- Thinly slice the ribeye or sirloin steak against the grain and season generously with salt and black pepper. Allow it to rest while preheating the skillet.
- Heat a skillet over medium-high heat, add olive oil, and sear the seasoned steak for 1-2 minutes on each side until browned. Remove and let rest.
- In the same skillet, reduce heat to medium, add butter, and crack in the eggs. Season with salt and pepper, and add cheddar cheese in the last minute to melt.
- Split the bagels in half and toast until golden brown, about 3-5 minutes.
- Assemble the bagels by layering the steak and cheesy eggs on the toasted bottom halves. Add optional toppings if desired.
- Place the bagel tops over the filling and serve immediately while warm.
