Step-by-Step Instructions
  1. Prepare the Filling by beating softened cream cheese and unsalted butter until smooth. Gradually mix in powdered sugar, lemon juice, and lemon zest. Chill for 30 minutes.
  2. Make the Dough by creaming together softened butter and powdered sugar until fluffy. Mix in vanilla extract and lemon zest, then add flour and salt. Combine until the dough forms a ball.
  3. Assemble Cookies by preheating oven to 350°F. Take a tablespoon of cookie dough, flatten it, add a teaspoon of filling, and roll into a ball. Repeat for all cookies.
  4. Bake cookies on a lined baking sheet for 12-14 minutes until lightly golden on the edges. Cool on the baking sheet for 5 minutes.
