For the Chicken and Veggies
  • 1 pound Boneless, skinless chicken breasts can be swapped for grilled halloumi or roasted chickpeas
  • 2 tablespoons Olive oil or avocado oil as a substitute
  • 1 medium Red onion can use yellow onion
  • 2 cloves Garlic fresh cloves preferred
  • 1 cup Red and yellow bell peppers or any bell pepper/zucchini
  • 1 cup Diced tomatoes or roasted tomatoes for deeper flavor
  • ½ cup Kalamata olives or green olives
  • ¼ cup Sun-dried tomatoes can be replaced with more diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano or fresh herbs
  • 1 teaspoon Dried basil or fresh herbs
  • ½ teaspoon Red pepper flakes omit for no heat
  • to taste Salt
  • to taste Black pepper
For the Rice
  • 1 cup Long-grain rice (basmati or jasmine) or brown rice/quinoa
  • 2 cups Chicken broth or vegetable broth for vegetarian
For the Tzatziki
  • 1 cup Greek yogurt dairy-free yogurt for vegan
  • ½ cup Cucumber or grated zucchini
  • 2 tablespoons Lemon juice or vinegar if lemon isn’t available
  • 3 tablespoons Fresh herbs (dill, parsley) optional
  • ¼ cup Feta cheese omit for dairy-free

Method
 

Step-by-Step Instructions
  1. Prepare the Chicken: Cut the chicken into 1-inch cubes, pat dry, and set aside. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Sauté the Onions and Garlic: Add chopped red onion to the skillet and sauté for 5-7 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Add the Bell Peppers: Mix in diced bell peppers and sauté for about 5 minutes until softened.
  4. Incorporate the Tomatoes and Olives: Stir in diced tomatoes, Kalamata olives, and sun-dried tomatoes. Cook together for 2-3 minutes.
  5. Season the Sauce: Add tomato paste, oregano, basil, and red pepper flakes. Season with salt and black pepper. Simmer for 15-20 minutes until thickened.
  6. Cook the Chicken: Add chicken pieces to the skillet and cook for 8-10 minutes until cooked through and no longer pink.
  7. Prepare the Rice: Rinse rice under cold water. Heat a saucepan with a splash of olive oil, and toast the rice for 2-3 minutes.
  8. Cook the Rice: Pour in chicken broth and a little salt. Bring to a boil, cover, and let simmer for 18-20 minutes.
  9. Fluff the Rice: Once done, let sit covered for 5-10 minutes. Fluff with a fork.
  10. Make the Tzatziki Sauce: Squeeze cucumber to remove excess moisture. Mix with yogurt, garlic, lemon juice, and salt. Stir in dill and refrigerate.
  11. Assemble the Bowls: Spoon rice into bowls, top with chicken mixture, and add a dollop of tzatziki.
  12. Garnish and Serve: Finish with fresh parsley and lemon wedges. Enjoy with family and friends!
