Step-by-Step Instructions
  1. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  2. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition and then mix in vanilla extract.
  4. Gently stir in mashed bananas until just combined.
  5. Fold in Greek yogurt until thoroughly blended.
  6. Gradually add dry ingredients to wet mixture, alternating with additional Greek yogurt until just combined.
  7. Fold in nuts if using.
  8. Preheat oven to 350°F and prepare loaf pan by greasing and flouring.
  9. Pour batter into prepared pan, smoothing the top.
  10. Bake for 50 to 60 minutes, checking for doneness with a toothpick.
  11. Cool in pan for 10 to 15 minutes before transferring to a wire rack.
