- Begin by grating medium-sized zucchini using a box grater. Squeeze out excess moisture using a clean kitchen towel.
- Shred sharp cheddar cheese and set aside.
- Preheat the oven to 350°F (175°C) and grease two 9x5 inch loaf pans.
- In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
- In a separate bowl, whisk together the wet ingredients: eggs, vegetable oil, granulated sugar, and vanilla extract.
- Gradually combine the wet ingredients into the dry ingredients, stirring gently until just mixed.
- Fold in the shredded zucchini, cheddar cheese, and any optional nuts.
- Pour the batter evenly into prepared loaf pans and smooth the tops. Bake for 50 to 60 minutes.
- Allow to cool in pans for 10 to 15 minutes before transferring to a wire rack.
