Instructions
  1. Begin by grating medium-sized zucchini using a box grater. Squeeze out excess moisture using a clean kitchen towel.
  2. Shred sharp cheddar cheese and set aside.
  3. Preheat the oven to 350°F (175°C) and grease two 9x5 inch loaf pans.
  4. In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
  5. In a separate bowl, whisk together the wet ingredients: eggs, vegetable oil, granulated sugar, and vanilla extract.
  6. Gradually combine the wet ingredients into the dry ingredients, stirring gently until just mixed.
  7. Fold in the shredded zucchini, cheddar cheese, and any optional nuts.
  8. Pour the batter evenly into prepared loaf pans and smooth the tops. Bake for 50 to 60 minutes.
  9. Allow to cool in pans for 10 to 15 minutes before transferring to a wire rack.
