  • 1 tablespoon Lemon Juice Freshly squeezed is best.
  • 1 teaspoon Ground Cumin Omit if not preferred.
  • 1 teaspoon Smoked Paprika Can use regular paprika if needed.
  • to taste Salt and Pepper Adjust to enhance flavors.
  • 1 small Red Onion Optional for flavor.
To Serve
  • 1 tablespoon Olive Oil Can replace with your preferred cooking oil.

Method
 

Preparation
  1. Warm the tortillas in a skillet over medium heat for about 30 seconds on each side.
  2. In a mixing bowl, combine cottage cheese, lemon juice, ground cumin, smoked paprika, salt, and pepper.
  3. Spread the cottage cheese mixture evenly in the center of each tortilla.
  4. Top with sliced avocado, cucumber, tomato, cilantro, and optional red onion.
  5. Roll the tortilla tightly from the bottom, folding in the edges as you go.
  6. Serve immediately or wrap tightly in parchment paper for storage.
